2 large handfuls cooked brown basmati rice
1 onion, chopped
2 garlic cloves, grated
Olive oil
1 pepper, deseeded and chopped
2 carrots peeled and grated
2 large tomatoes, deseeded and diced

150g crumbled or diced feta cheese / vegan Greek style cheese

Sweet Potato & Rocket Salad

2 ripe avocados cut into cubes 
1 or 2 bags mixed salad leaves 
1 bag rocket 
1 tsp smoked paprika 
1 tsp dried oregano handful fresh basil 
Greek Feta or vegan feta style cheese (I like Koko Greek style cheese)

Classic Hummus Recipe

400g tin of drained chickpeas
1 clove garlic (peeled)
2 tbsp tahini (sesame paste)
1/2 tsp salt
1/2 tsp ground cumin
3 tbsp lemon juice
150ml olive oil
 
Method:
Combine in a food processor until smooth, you may need to add a little water to loosen it up a bit.   Adjust the salt/lemon to taste.

Chocolate Breakfast Oats Recipe

50g porridge oats 
1 tbsp raw cacao
1 tsp ground cinnamon
2 tsp chia seeds
200ml milk of choice
2 tsp pure maple syrup or raw honey
1 large dollop of nut butter
Berries and more nut butter to serve (optional)

Mix the dry ingredients together in a bowl.
