Cacao Bliss Balls Recipe

Ingredients: makes at least 10

250g cashew nuts

250g desiccated coconut

250g pitted dates

brown rice syrup (sometimes called malt rice syrup) or other sweetener

125g raw cacao

 

 

Method:

Blitz the cashews in a food processor until you get even crumbs

Add the coconut and do the same.

Add the dates and blitz until broken down.

Add the cacao and salt and blitz again.

Vegan Bean Burger Recipe

250g cooked brown rice (use a pack of pre-cooked rice as a shortcut)

half onion finely chopped 

1 tbsp flour (any kind, I use brown rice flour)

2 tsp smoked paprika

1 tsp ground cumin

2 tsp garlic powder

half tsp salt

Fresh chopped herbs like Coriander/Parsley (optional)

Fresh chopped Chilli (optional, if you like it spicy)

Cocktail Blini Pancake Recipe

Ingredients:
Makes at least 20
 
150g Flour (any kind, self-raising gives thicker blinis)
1 egg / 1 Chia Egg*
150ml milk (any kind)
Olive or coconut oil (I use a light olive oil spray)
 
* 1 Chia Egg = 1 tbsp Chia Seeds mixed with 2.5 tbsp water and leave for 10 minutes til thickened.
 
Method: 
Mix the ingredients in a bowl with a whisk (you can use a hand mixer too), until combined.  You want a yogurt like consistency.

2 large eggs (or 2 Chia eggs if you are plant-based*)
400g cooked butternut squash, mashed or blitzed in a food processor
120g Flour of choice (gf or spelt etc)
½ tsp baking powder

1 cup raw cashews
1/2 cup desiccated coconut
1 tsp vanilla extract
2 tbsp maple syrup or similar
1 tsp sea salt
60g Vegan Dark Chocolate
 
Method:
Whizz all ingredients in the food processor until it resembles crumbs of equal size.
