Greek (Pasta) Salad

Cooked cooled pasta (between 200-500g)

Chopped onion (red onion or spring onion)

Tomatoes (large or cherry, chopped or sliced)

A whole cucumber, chopped

Feta cubed or crumbled

Tinned Chickpeas or cannellini beans (optional)

Handful chopped herbs (flat leaf parsley, mint, basil etc)

Chopped olives and capers (optional)

Diced peppers (optional)

Extra virgin olive oil

salt and pepper


Less of a recipe… more of a serving suggestion!

This is a good recipe to use whatever you might have in the fridge.  It doesn’t matter if you don’t have all the ingredients or if you decide to add in something else and don’t worry about quantity either, basically stir lots of yummy things into pasta and season with salt, pepper, olive oil and fresh herbs.

Recipe Notes:

Make a batch of this to keep in the fridge, great for lunchboxes.
