Herb & Cheese Muffins

300g self-raising flour
½ tsp of mustard powder
½ tsp paprika (optional)
120g grated cheese
handful of cubed feta cheese
handful of chopped herbs (eg basil, parsley, chives etc)
Handful grated parmesan to top (optional)
1 egg, beaten
Mix the butter and flour in (use your fingers and rub in until like breadcrumbs)
Mix in the grated cheese and herbs, then the feta.
Stir in the milk and egg and mix very gently, don’t beat it.
A good dessert spoon per muffin case
Sprinkle parmesan or regular cheese on the top
Bake for 20 mins on 180c fan oven
Place them on a cooling rack
Perfect for freezing.
On the go breakfast or packed lunches.
