Not Just Leftover Rice

2 large handfuls cooked brown basmati rice
1 onion, chopped
2 garlic cloves, grated
1 pepper, deseeded and chopped
2 carrots peeled and grated
2 large tomatoes, deseeded and diced
2 handfuls chopped spinach
2 tbsp Tamari or Soy Sauce
Sea salt & black pepper
Chopped fresh herbs (optional)
In a shallow pan, sauté the onion and garlic in a little oil until softened.
Add the fresh tomatoes and soften. Stir in the grated carrot and
chopped pepper and stir for about 2 minutes.
Add the cooked rice and combine, season with salt, pepper and Tamari and finally stir through the spinach and herbs (if using).
Serve as a side dish.
