Summertime Raw Tomato Sauce

6 large (ish) ripe tomatoes

1 or 2 shallots finely chopped

1/2 clove garlic crushed or grated

2 tsp lemon juice

1 tsp salt

1/2 tsp raw honey

a pinch fresh ground pepper

300ml extra virgin olive oil (more as needed)

handful chopped fresh soft herbs (eg. basil, marjoram, oregano, coriander...)


Slice the tomatoes in half, using the cut half, grate the tomatoes into a bowl, you can either discard the skin or chop it finely and add it to the sauce.

Combine with the other ingredients, you can add a handful of grated parmesan or a handful of halved cherry tomatoes if you want.

Serve at room temperature, this keeps in the fridge with a lid for about 4 days.
